Instructions:
Clean the lettuce, discarding any limp or discoloured outer ones. Wash and spin dry. Serve in a bowl and lightly drizzle with 2 tbsp of salad dressing of your choice.
Heat the frying pan on a medium heat and add 4 Truly Irish Beechwood Smoked Rashers. Cook for a few minutes, turning a few times, until sizzling and golden.
Carefully wipe the pan with a ball of kitchen paper and put it back on a medium heat. Add a handful of pine nuts and toast them for a couple of minutes, until golden brown.
Drape the warm rashers over the lettuce, sprinkle with the pine nuts and shave strips of parmesan cheese over the top before serving.
