Smokey Salad

Truly tip: Try this using Feta Cheese instead of parmesan.

Prep

  1. Clean and chop tomato into slices.
  2. Wash Lettuce
  3. Clean and dice pepper
  4. Chop Sundried tomatoes into small pieces
  5. Preheat grill and place 4 smoked rashers grill tray.

Cooking

  1. Place the grill tray under the grill and cook the rashers until crisp turning occasionally.
  2. In a small bowl, mix the peppers sundried tomatoes and pine nuts.
  3. To serve layer the bottom of each bowl with the mixed lettuce leaves, top with the pepper and sundried tomatoes mix.
  4. Chop us the rashers and add on top of the salad.
  5. Finally, grate some parmesan cheese on top.
  6. Enjoy!
